Vegetarian and Vegan
We serve special, scratch-made vegetarian entrees weekly, and the majority of our special side dishes are vegetarian; many are also vegan. To identify these, we will provide you with a comprehensive ingredient list of all in-house prepared foods. This list also indicates which foods are Vegetarian (V), and which contain Egg (E) and/or Dairy (D). On a daily basis, we have many standard options available that can serve to create a balanced and varied meal plan during your stay. These options include:
Vegan: seasoned black beans, veggie burger, black bean burger, tofu stir fry, brown rice, baked white or sweet potato, whole wheat pasta, cold cereals, soy milk, oatmeal, whole wheat bread or bagel, rye bread, fresh fruit, raisins, salad bar, steamed vegetables, sautéed green beans, grilled onions, almonds, walnuts, peanut butter, flaxseed, white bean dip, select homemade salad dressings, and olive oil.
Vegetarians will also enjoy: Skim and Lactaid milk, plain and vanilla yogurt, eggs, egg whites, cottage, mozzarella, and cheddar cheeses, baked ziti with roasted vegetables, wheat crackers, light cream cheese, light sour cream, light mayonnaise, and smart balance margarine.
Celiac Disease and/or Gluten Intolerance
We will provide you with a comprehensive ingredient list of all in-house prepared foods. This list also indicates which foods contain Gluten (G) or Wheat (W). In addition, we can provide special gluten-free grain products so that you can enjoy a good variety of foods while on program. Your options may include gluten free crackers, breads, pasta, oatmeal, cereals, and/or tortillas (depending on availability).
It should be known that we do not typically keep a strict Kosher kitchen, and our "special" entree and side dish recipes are not made to be Kosher. However, we are able to procure kosher chicken, fish, and roast beef and/or turkey deli meat. We prepare these foods in pans coated with aluminum foil to ensure they are not exposed to other meat products in our kitchen.
The great majority of our cooked side dishes are meat free; we also have a large salad bar at lunch and dinner and fresh fruit available at each meal. Most of our pre-packaged products like yogurt, cottage cheese, milk, cream cheese, dry cereal, black bean burgers, bagels, and jam are also kosher and we have a variety of sauces/spices available in the dining room for seasoning that are kosher. We can serve your food on paper or plastic plates and bowls if you desire, and we also have plastic cutlery and cups.
