Meet Our New Chef/Manager at Duke Diet & Fitness

We are delighted to welcome a new Chef/Manager to the DFC Food Service Team: Mr. Robert R. Humphries! Read on to find out more about Robert's previous experience and interestsand we hope you will be able to meet him in person soon. We know you will agree he is a wonderful asset to our team.

I was raised on the Upper West end of Central Park Westin the back-end of a mid size Japanese restaurant in the lobby of the Ruxton Hotel. I was an Art major in High school and other than painting & sculptureI still couldn’t decide on a career….so went off to the Navy for four years. After my Navy time I landed in Florida, where my parents and two older brothers had already migrated after selling off the only one restaurant in NYC.  I arrived in Florida while my parents’ third restaurant was under construction, went to Community College for a Business degree and spent 24 years managing the family restaurants, and contributing to another 4 more before choosing to open my own restaurant.

I began my journey to Culinary school in St. Augustine, Florida. During my two year courseI won the Bronze medal for Ice Sculpture in a competition in Orlando. I received three Letters of Appreciation: one from my instructor & two from the Director of the Culinary program, served as Student Body President in my senior year and after two years was recognized for “Outstanding Achievements”receiving a two year Scholarship to Johnson & Wales, Miami, Florida.  Having only finished one year of the Scholarship, I had to leave for Japanbeing pre-enrolled in Culinary School in Tokyo. I finished my schooling there and less than one year later opened my first restaurant.

With Jacksonville, Florida’s first Super Bowl hosting and the hype of the revitalization of downtown Jacksonville, my restaurant flourished. In my first year I did many interviews for Business Journals & Jacksonville Magazine and received newspaper accolades from Orlando to New York Times. Hosting the New York Times journalists, I was granted the first listing and insert story on my restaurant on the front page of the food section.

I came to North Carolina with my fiancé and now have found gratification and home with Meriwether Godsey and Duke Diet & Fitness Center. Thank you all at DFC, for letting me share this time here… I’m so proud to be here and having this opportunity to work with an awesome team and my Supervisor, Cate Smith!
